I've made onigiri in advance but I usually freeze it, then reheat on high in the microwave in the morning. Of course, this limits my stuffing options so at times, I just opt to freeze the rice then mold in the mornings. The nori, I usually add before packing in the bento.

My only apprehension about refrigerating onigiri is that it might dry up, but I haven't really tried it out, so I'm not much help there. I usually eat my onigiri at room temperature. I don't know if that's traditional, but it works for me. ^_^

Hope that helps, Jennifer! Thanks for dropping by.
