All summer, I’ve been avoiding baking because it’s too damn hot. Just the thought of slapping tray after tray of cookie dough into a hot oven is enough to give me heatstroke. Of course, this translates to a lot of unsatisfied cravings, not the least of which is for bacon chocolate chip cookies. A special cookie made from my own secret recipe, this delicious cookie is a mix of sweet and salty, chocolate and bacon. Then it occurred to me. What if I take one of those ubiquitous 3-minute mug cake recipes and bacon-ify it? Hallelujah, pigs have started to fly!
Once the idea took root, I threw my original Great Food challenge idea out the window in favor of a freshly baked bacon chocolate chip deepdish cookie, served a la mode. Sounds divine? And what makes it even better is the fact that it takes less than 15 minutes to prepare, three if you have pre-cooked bacon. No need to toil over an oven in this boiling heat. It’s the no sweat summer solution to freshly baked cookie cravings. And with ice cream even!
Start off with a ramekin — a microwave safe one — and a teaspoon. Put in a pat of Dari Creme, then melt in the microwave. Add white and brown sugar. Don’t skip the brown sugar, it adds depth of flavor and softness.
Mix, then add an egg yolk, vanilla, and a pinch of salt. Add flour. Stir until well blended. Lightly toss in chocolate chips and cooked Purefoods Honeycured Bacon bits. To prepare, I usually cut the bacon into 1cm bits, then render it in its own fat until crisp. Be gentle when mixing the chocolate and bacon. You want to preserve their shape for maximum awesomeness later.
Microwave for 40-60 seconds. If it’s your first time, err on the quicker end of the spectrum, then just cook longer next time. The cookie should be soft and almost cake-like. Think of it as a blonde brownie in a ramekin. Overcooking will make a dry, hard cookie, and this is an easy cookie to overcook.
Serve with a scoop of Magnolia’s The Best of the Philippines Ice Cream in the flavor of your choice. I used Mangoes and Cream, but honestly, I would’ve loved to try this with Kesong Puti.
Bacon Chocolate Chip Deepdish Microwave Cookie A La Mode
Serves 1 (Or two, but do you really want to share?)
- 1 Tbsp Magnolia Dari Creme
- 1 Tbsp white sugar
- 1 Tbsp brown sugar
- 1 egg yolk
- a few drops vanilla
- a pinch of salt
- 4 Tbsp all purpose flour
- 2 Tbsp chocolate chips
- 2 strips of Purefoods Honeycured Bacon, fried and crumbled
- Magnolia Best of the Philippines Ice Cream
- Melt Dari Creme. Add sugars then mix until blended.
- Add egg yolk, vanilla and salt. Mix.
- Add flour. Mix well.
- Lightly toss in chocolate chips and Purefoods Honeycured bacon.
- Microwave on high for 40-60 seconds.
- Serve while fresh from the microwave, with a scoop of Magnolia Ice Cream on top.
